Q&A - What Can You Do With Verjuice? 

Maggie Beer has been making Verjuice commercially for many years now but many people still find it difficult to know exactly what to do with it.

Verjuice is made from the juice of unfermented grapes.  It has a gentle flavour and is a great substitute for lemon or vinegar when you want a less tart choice.

Some recipe suggestions:

  • Panfry some chicken breast in butter. When the chicken is almost cooked and the butter has browned, drain off most of the butter.  Wait for the pan to start sizzling then add some verjuice to the pan and deglaze the pan with the chicken still in the pan.  The verjuice and butter mix becomes like a syrup and you can then pour it over the chicken to serve.
     
  • Roast pumpkin in the oven.  Take out just before its cooked.  Sprinkle verjuice over the pumpkin and then return it to the oven for another 3-4 minutes.
     
  • Verjuice salad dressing is a great way to liven up a green salad.  Mix it with Walnut oil - use a 50/50 ratio - and add in a little Dijon mustard and some salt and pepper.

 

Supplier Spotlight - Maggie Beer

Maggie and her husband Collin began farming pheasant and other game  in the Barossa Valley, South Australia in 1978.  They set up a Farm shop to sell the produce and this eventually morphed into the Pheasant Farm Restaurant, winner of many national restaurant awards.

Maggie had become something of an expert in the cooking and preparation of the game and so started a food career that has spanned 25 years.

Maggie expanded into packaged food when she began offering Pheasant Farm Pate, a restaurant favourite, in 1984.   Verjuice also became commercially available that year too.

Her range has expanded considerably into olive oils, pastes, jams, and sauces since then and Maggie has authored several cookbooks and built an international reputation around making food fresh and interesting.
