The countdown to Christmas has now begun. If
you haven't already thought about what to do, now is
the time to start planning and avoid that last
minute panic.

Cherries are now in season and they're fresh and plentiful - both organic and
conventional.
Did you know that cherries are an ancient fruit originating in western Asia
and south eastern Europe? In Australia 80% of cherries are produced in
NSW, around Young and Orange.
Cherries keep better when their stalks are left intact. When choosing
cherries for our customers we look for full and shiny cherries with green
stalks. We make sure to avoid undersized cherries (this is because they
gain around a third of their volume and flavour in the last week before
harvesting - pick them too early and you miss out on size and taste).
Cherries make a great edible table decoration for a dinner party or Christmas
lunch. You can make them a little more interesting by dipping them in egg
white and then castor sugar.
A simple desert that works really well with
cherries is a Cherry Clafoutis.
Clafoutis is a traditional French dish that
may look difficult to say but is super easy to make! It consists of batter
poured over pitted cherries. It can be sprinkled with flaked almonds for a
crunchy finish.

Another easy recipe is
Roast Duck with Cherry sauce. Although this recipe recommends using
canned cherries you can easily swap it for fresh.
The good news is that it's not as difficult as you might think. This
recipe has been road tested by Samantha's aunt. The only problem was that
her dinner party guests liked it so much they kept coming back for more and she
didn't have any leftovers to enjoy the next day!
Remove the skin and as much fat from the ham as possible and scribe a diamond
pattern across one side.
Pour half a can of stout over the ham and cover it with foil and cook on a
low heat (around 160C) for 2 hours.
Mix 1 tablespoon of stout with ½ cup of brown sugar. Add 2
teaspoons of cardamon, 1 teaspoon of dry mustard, and 1 teaspoon of powdered
ginger. Stir into a paste and cover the ham with the paste.
Return ham to the oven for a further 45 minutes or until the paste is brown
and sticky.

STORAGE TIP: Just in case you do have some leftovers, you can store a
ham on the bone by wrapping it in a damp tea towel or pillowcase that has been
rinsed in 1 part vinegar to 5 parts water. It's best stored in the coldest
part of the fridge. If you rinse the cover every 2-3 days, the ham should
last for 2 weeks.
