What's Fresh?

You know Spring is here when asparagus start appearing in growing numbers.

When we buy asparagus we make sure that the spears are clean, smooth and bright green, the tips should be unblemished and dark green. 

They don't keep for long, so use them within 2-3 days when you get them home.  When it comes to storing them, think of them like cut flowers.  You can either store them upright in a few centimetres of water in the fridge or wrap them in paper towels and lie them down in the crisper.

So how can you enjoy these yummy fresh greens?

There are a few options but one favourite is to wrap each spear in a thin section of prosciutto and BBQ them.  They take around 5 minutes to cook.

If you're boiling asparagus make sure you don't overdo it.  They only take around 5 minutes, uncovered, once the water is boiling.  One way to tell if they are ready is by pricking a knife against the thickest part of one spear.  Another way is the colour.  They should still be bright green, not grey.

Drain the spears on a cloth and then mix with some extra virgin olive oil, a small amount of a nutty oil (Macadamia oil is a good choice) or some butter.

Asparagus also make a great addition to bacon and eggs for breakfast.  Fry the asparagus in a little butter, season with salt and pepper and cook until just tender and bright green.  Serve with bacon and eggs on toasted sour dough bread.

 

Q&A - What's for Dinner? 

Do you dread that question? In our house it gets asked at any time of the day, sometimes right after breakfast!  The problem is there is no good answer. 

If you say 'soup' and someone doesn't like soup then it becomes clear you've just ruined their day.  Or you say roast chicken and that's fine, everyone likes that. 

But then it comes time to cook and you realise you're missing a crucial ingredient (like the chicken!) or you've left it too late to cook it and you revert to plan b which hasn't been approved by the troops. 

While we can't promise to solve the 'what's for dinner' daily dilemma, we have a couple of suggestions that will hopefully take the stress of it all. 

What you need are options to help you work it out. 

The first problem is what to cook.  What do you feel like? What will everyone be happy eating?

You can get the recipe books out and flick through them for inspiration.  Or try online recipe sites.

The great thing about some of the online recipe sites is that many recipes have feedback from others about how easy it was to cook and how tasty it was, something you don't get from a regular cookbook without doing your own trial and error.

Many like Cuisine.com.au also have a search function so that you can type in the ingredients you have and see what recipes come back in the results and then pick something from there that appeals.

If you really want to get organised you can use the sites above to come up with a list of meals that appeal, print out the recipes and use the ingredient lists to work out your shopping list.  Then place your order with HomeFresh right away so that you know you'll have everything you need.

Supplier Spotlight - Wildbite 

Wildbite was created when Trace Gordon and Roe Ritchie moved from Melbourne to Byron Bay in 1998.  They had been running their own organic food business in Melbourne and knew what they wanted in a new business.

Wildbite combines fresh natural organic produce into yummy traditional biscuit recipes but with a distinctly Australian difference - they've incorporated Australian wild foods into the mix.  Flavours like local lemon myrtle, aniseed myrtle, South Australian desert wattle seed, and Tasmanian mountain pepper are some of their favourites.
