What's Fresh?

Yes autumn is here and with the cooler months is the return of some of our favourite vegetables. 

Gem Squash are in!  You can find them in our stores and on the website.

Broccoli and cauliflower are back in our setboxes this week!  Both organic and conventional broccoli and cauliflower  are also available on our website at affordable prices. 

When choosing broccoli we look for broccoli without a yellow tinge, no flowers or separation amongst the heads.  We also avoid any strong-smelling broccoli.  Broccoli is best stored in the crisper in vegetable storage bags.  You can also store it in the fridge in a jug of water with the heads lightly covered by a plastic bag.

Broccoli is great with a variety of flavours like butter, olive oil, almonds, pine nuts, and walnuts.

While cauliflower is available all year, the peak season is winter.  When it comes to cauliflowers, size doesn't matter!  We look for cauliflowers that are tightly packed, very white and with no separation of the florets.

Cauliflower works well with most cheeses, butter, parsley, anchovies, olives and olive oil.

TIP:  Keep a cauliflower white when boiling by adding a tablespoon of lemon juice to the water.  If you are looking for extra flavour, add a few of the green leaves to the water. You can avoid a sulphur odour which sometimes occurs when cooking cauliflower by adding a bay leaf to the water.

Q&A - How do I cook a steak? 

The key to cooking a steak so that it isn't tough is to make sure that you sear it on high heat for 1 minute on both sides to seal in the juices.  Then you can lower the heat and cook for a further 3-5 minutes on both sides.

Before cooking, brush steaks with some oil and sprinkle with cracked black pepper.  A nice subtle way to infuse flavour into your steaks is by varying the oil you use.  Truffle oil or avocado infused oil  are good choices.

How do you know when your steak is cooked?

It all comes down to how the steak feels when you press it with your tongs.  If you like it rare, then it should have the same 'springiness' as your cheek.  If medium to medium rare is your preference then you want the same feel as your chin.  If well done is what you are after then you want the firmness of your forehead.

 

Supplier Spotlight - Segreti 

We began stocking Segreti antipasto last month and with little promotion or fanfare it has quickly become a fast seller.

Mark and Erika Sivyer are the force behind Segreti, a local south east Queensland company that began several years ago and makes delicious antipasto. 

We're glad to say that Mark picked up his cooking skills from his Italian mother and time spent in the kitchen while in the army, not during his former career in earthmoving!  Erika has worked for The Gap Family Markets and Zone Fresh.  Together they make food with lots of wonderful and interesting flavours.

What is great about Segreti and it sets them apart from other companies producing antipasto is their attention to detail and the interesting twist that they add. 

Most marinated mushrooms are the button variety but Segreti uses local field mushrooms which are soaked in lemon juice, oil and herbs before roasting and char-grilling.  They are lovely stirred through pasta.

Peppadews are small tangy peppers, a cross between tomatoes and peppers, and originally from South Africa.  They aren't a common antipasto offering but are delicious the Segreti way - packed with mascarpone, fetta and danish blue cheese.

Their products are great tossed into a salad, served on a platter, perfect with a good crusty loaf or seared on the BBQ.
