Avocado & Blueberry Pancakes

Preparation Time: 5 Mins
Cooking Time: 10 Mins
    • 1/ teaspoon cinnamon
    • 1 medium sized avocado
    • 3/4 cup milk of your choise (cow or coconut)
    • 1 tablesppon fat of your choice (butter, ghee or macadamia oil)
    • 1 egg (or go egg free!)
    • 1/2 teaspoon vanilla powder, essence or paste
    • 1 cup wholemeal spelt flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon sea salt
    • 1/2 cup blueberries, fresh or frozen
  1. In a blender or food processor, mix the cinnamon, avocado, milk and fat of your choice, egg and vanilla until well combined and smooth. Thermomix 30 second, speed 5.
  2. Add the spelt flour, baking soda and sea salt and mix until just combined. Thermomix 10 seconds, flour symbol.
  3. Lastly fold in the blueberries.
  4.  Heat the fat in a cast iron or non-stick pan over a moderate heat.
  5. Add the pancake batter to the pan and cook until the batter starts to bubble and the edges brown.
  6. Carefully flip and serve hot with maple syrup.
