Chicken Lo Mein

Preparation Time: 10 minutes
Cooking Time: 20 minutes

    300g dry eggs noodles

    2 chicken breasts, sliced thinly

    1 red capsicum

    1 carrot thinly sliced

    1 small onion, sliced

    1 cup shredded cabbage

    1 cup bean sprouts

    1 tsp minced ginger

    2 cloves minced garlic

    ¾ cup water

    ¼ soy sauce

    2 tbsp corn starch

    1 tbsp oyster sauce

    1 tsp seasame oil

    3 tbsp canola oil

  1. Cook the egg noodles 1 minute shy of the directions. Drain the noodles and toss them with sesame oil.
  2. Heat 2 tbsp oil in a large skillet or wok over medium-high heat. Cook the chicken 3-4 minutes on each side until cooked through.
  3. Remove chicken from pan and add in the red capsicum, ginger and garlic and cook for 1-2 minutes, stirring frequently until just softened.
  4. Add in water, soy sauce, corn starch, oyster sauce, carrot, onion and cabbage and cook for 1-2 minutes. Add cooked chicken and egg noodles into the wok.
  5. Add in the bean sprouts and toss all the ingredients together well before serving.
