Yellow Chicken Curry
Serves: 4
Preparation Time: 10 minutes
Cooking Time: 25 minutes

    2 Chicken Breasts, diced into bite size pieces

    1 tbsp sesame oil

    4 tbsp of Geo Organics’ Yellow Curry Paste (this can be adjusted depending on how hot you want it)

    1 can coconut milk

    3 medium potatoes, diced

    1 onion, sliced

    1 carrot, sliced

    1 red capsicum, sliced

    Green beans

  1. Heat a large pot on medium heat and add the sesame oil and chicken. Cook chicken for about 7 minutes, until chicken is nearly cooked through.
  2. In a separate smaller pot, boil potato, beans and carrot on high for 5 minutes and then drain water.
  3. Add onion and capsicum to chicken and cook for a further 2 minutes.
  4. Add potato, carrot and beans to main pot and combine. Stir through curry paste and cook for 2 minutes.
  5. Add coconut milk and stir to combine. Leave to simmer for 10 minutes.
  6. Serve over your favourite rice and enjoy!
