Dice the tomatoes, red onions, cucumber (to your preference) and place in a bowl with the chickpeas. Pour the balsamic vinaigrette into the bowl and toss the salad. Cover and let site in the fridge for approx. 20-30 minutes. This helps the all flavours to combine.
Once done, remove stems for parsley and chop or tear them up. Crumble or grate the feta cheese into the bowl along with the parsley and toss again. Then get your tummy ready for an easy yet delicious meal.
