Carrot Oat Muffins

    1/4 cup vegetable oil
    2 eggs
    1 cup rolled oats
    1 1/2 teaspoon baking powder
    1 teaspoon cinnamon
    1 1/4 cups wholewheat flour
    3/4 cup buttermilk
    1/3 cup brown sugar
    1/2 teaspoon nutmeg
    1 cup grated carrot
    1/2 cup sultanas
Preheat oven to 180°C.
Mix together vegetable oil and sugar. Add eggs and beat until thoroughly combined. Stir in carrots and set aside.
Stir together rolled oats, flour, baking powder, cinnamon and nutmeg. Add dry ingredients to carrot mixture with sultanas and buttermilk, stirring until combined.
3/4 fill 12 muffin cups and bake for 20 minutes.
