Veggie and Haloumi Pancake

Cooking Time: 5mins
    • 8 prepared medium pancakes
    • thin leek strips, soaked in warm water to soften
    • 30 ml olive oil
    • 500 g mixed stir fry vegetables
    • 125 ml prepared basil pesto
    • 250 g haloumi cheese, sliced into strips
Heat the oil and add the vegetables. Toss over very high heat for about 3 - 4 minutes. Remove from heat and stir the pesto through. Arrange a portion in the centre of each pancake.
Heat a non-stick griddle pan and briefly grill cheese on both sides. Place on top of the vegetables. Fold sides of pancakes over to form rolls, and secure every 4 - 5 cm with a leek strip. Slice between the leek strips and place rolls on an ovenproof serving platter. Reheat for 5 - 6 minutes in a moderate oven before serving.
