Chicken Quiches
Serves: 12
Preparation Time: 10mins
Cooking Time: 20mins
    • 125 g chicken, chopped
    • 250 g white cheddar, coarsely grated
    • 75 g blue cheese
    • 6 jumbo eggs
    • 100 ml greek yogurt
    • micro herbs
    • 3 Fig Jam
Preheat oven to 180C. Spray a muffin pan with olive oil spray.
Heat a pan and fry the chicken rashers until crispy, remove from the pan and allow to cool.
In the meantime, mix the cheese, yogurt and eggs together then spoon the mixture into the prepared muffin pan. Top 6 of them with crumbed blue cheese and 6 with the chicken.
Bake for about 15-20 minutes or until the quiches are firm to the touch.
Garnish the blue cheese quiches with some Fig Jam and a sprinkle of micro herbs.
