Basic Biscuit Mix
Preparation Time: 10mins
Cooking Time: 15mins
    1/2 cup brown rice flour
    1/2 cup castor sugar
    1 teaspoon vanilla
    1 egg
    2 cups 85% light flour
    1 teaspoon baking powder
    1/4 teaspoon salt
Preheat oven to 190°C.
Combine rice flour, sugar and vanilla. Add the egg and mix well. Sift the flour, baking powder and salt. Stir into creamed mixture to form a firm dough. Knead lightly on a floured surface.
Roll teaspoonfuls of mixture into balls and place on greased tray.
Bake for 12-15 minutes. Cool on wire rack.
Biscuit mix variations can be made by adding 1/4 chopped nuts, cherries and/or coconut.
