Method
Dice the tomatoes and Feta cheese into small cubes. Tear each basil leaf into 3 and add to the Feta and Tomato mixture. Drizzle with Balsamic vinegar and a teaspoon of olive oil from the Barambah Marinated Feta. Add salt and pepper to taste and set aside.
Toast the meagrain and cut into triangles place the rocket on top of the toast. Then spoon your tomato and Feta mixture onto of the rocket. Finish with some cracked pepper and enjoy.....
