Hemp Seed & Tabbouleh Salad

Ingredients
    • 1 1/2 cup shelled hemp seeds
    • 1/4 cup lemon juice
    • 1/2 teaspoon fine sea salt
    • 2 green onions, finely chopped
    • 1 clove garlic, finely chopped
    • 2 cups packed fresh flat-leaf parsley leaves, finely chopped
    • 1 cup packed fresh mint leaves, finely chopped
    • 1 tablespoon extra-virgin olive oil
Method

 

1. In a large bowl, toss together hemp seeds, lemon juice and salt.

2. Add the green onions, garlic, parsley, mint and oil and toss to combine. Serve immediately, or refrigerate in an    airtight container until ready to serve.
