Honey and Mint Melon Balls

Ingredients
    • 125 ml honey
    • 15 ml lemon juice
    • 30 ml finely chopped mint or spearmint
    • Mint leaves to garnish
    • 1 litre mixed melon balls, chilled
Method
Place the honey, lemon juice and chopped mint in a glass jug and microwave for 60 seconds on high until heated, but not boiling. Set aside to cool completely, then strain and pour over the melon balls.
Toss lightly to mix and serve garnished with whole mint leaves.
