Chicken Curry

Ingredients
    • 500g Chicken breast
    • 500g potato (1cm cubes)
    • 250g Carrot (1cm Cube)
    • 100g Beans (cut in half)
    • 2 Onions (roughly chopped)
    • 1 Tbl Curry powder
    • 1 Tbl Coriander seeds
    • 1 Tbl Garum marsala
    • 5 Tbl crush garlic
    • 5 Tbl crush ginger
    • 100g tomato paste
    • 1 tins diced tomatoes

    To garish

    • Fresh Coriander
    • 20ml Cream

     

Method
  1. ·  Brown chicken pieces in a hot pan and remove
  2. ·  Add onions, curry powder, coriander seed, garum marsala, crush ginger, crushed garlic in the pan and cook for about 2-3 mins.
  3. · Add tomato paste and cook for a further 2 minutes..
  4. · Add diced tomatoes and allow simmering for 10 minutes.
  5. · Add Potatoes and carrots and cook for a further 10 minutes.
  6. · Add diced chicken and beans and cook for 10 minutes or until chicken is completely cooked. Turn off the heat and stir through the coriander and cream.
  7. · Serve and garish with coriander.
