Mexican Quinoa

Cooking Time: 20 Minutes
Ingredients
    • 1 pack Celebrate Mexican Quinoa
    • 400g can Black Beans, drained
    • 1 chargrilled Red Pepper, diced
    • 2 Corn Cobs, chargrilled and niblets sliced from cop
    • 2 tbsp Coriander leaves
    • Lime Zest and Smoked Paprika for garnish

     

Method
  1. Chargrill corn and red peppers until tender using a barbeque, skillet pan or oven grill
  2. Roughly slice the corn kernels from the cob and separate into bite sized sets of kernels (nibblets). Dice grilled capsicum and set both aside
  3. Combine one sachet of Celebrate Health Mexican Quinoa with 1 1/2 cups of water in a saucepan and bring to the boil
  4. Cover and reduce heat to LOW. Cook for a further 10 minutes
  5. Turn off the heat and leave saucepan covered, allowing the quinoa to further absorb moisture for another 5-8 minutes
  6. Stir grains to separate
  7. Toss the drained black beans, red pepper, chargrilled corn and coriander leaves through cooked quinoa. Garnish with lime zest and smoked paprika
