Spelt Waffles

Ingredients
    3 cups spelt flour
    4 eggs; separated
    3 teaspoons baking powder
    1 teaspoon salt
    2 cups milk
    2 teaspoons sugar
    2/3 cup oil
Method
Beat egg whites until stiff but not dry.
Beat yolks in large mixer bowl until thick. Add milk and sugar and mix well. Sift flour, baking powder and salt, add to egg yolk mixture. Add oil, then fold in egg whites.
Makes 4 large waffles.
